What's For Dinner Wednesday - Poppy Seed Chicken

My dear friend Lisa suggested I make this on Monday when I was totally out of ideas, but since I have not made it yet this week, I think we will have it tonight. Here is my recipe for poppy seed chicken.

Tonight for dinner:
POPPY SEED CHICKEN

INGREDIENTS
5 cups chopped cooked chicken
1 (10.5 ounce) can condensed cream of chicken soup
1 cup sour cream
1 1/2 cups crushed buttery round crackers
1 teaspoon poppy seeds
1/2 cup butter, melted

DIRECTIONS:

Preheat the oven to 350 degrees F (175 degrees C).
Place the chicken into a 9x13 inch baking dish. In a medium bowl, stir together the condensed soup and sour cream. Pour over the chicken. In a separate bowl, stir together the crushed crackers, poppy seeds and melted butter. Sprinkle over the chicken and sauce. Bake for 30 minutes in the preheated oven, until the top of the casserole is browned and the sauce is bubbly. ENJOY! Tastes delish served over rice!!!

I make this all the time, but I use 1 can cream of celery soup and one can of cream of chicken. I then mix in the sour cream and use some spices. I mix in the chicken and add in cooked angel hair pasta. I top with the cracker mix and bake till bubbly. It is super yummy.

This is almost how i make it. But I cover it with tons of cheese and mix some of the crackers in with the soup and chicken.
Then we serve it on rice.
My family calls it Missionary Chicken!

My Decade Later Comeback and Playing Catch Up

Hello friends, It's been awhile and I kind of dropped off the face of the planet since moving to Oregon. I got busy with growing four babies into teens, and attempting to hold together a marriage with a partner who was working out of town for the most part. It was a lot! Truth be told, I have been spending most of my time over on Instagram which allows for more quick picture and caption posts (@the.amanda.sewell), but I really, genuinely miss having a journal of our adventures, so I'm back.  Some changes, my ex-partner moved out in October of 2023 (after 23 years of marriage, who would have thought?) and I am on a new, single mom adventure with the fabulous four. Luckily, they are adjusting to the changes well as we navigate this challenging time as a family team. Things are still in flux and hopefully at the end of all of this, the dust will settle and we will end up landing on our feet. Because of this change, I needed to go back to work and after not working for the past lo...

A good mail day

Yesterday was an awesome mail day! I got my swaps from Jody (texasjodylynn). Let me explain, each month, Jody and I swap three things -- cards, 3D objects (usually), and sometimes goodies we find that we think the other person might like. We have done this for about 6 months I think. Well yesterday I got the most amazing Jody package. Here are a few pictures of the stuff inside. The chocolate box was made with designer paper and said "You make life sweet" on top and inside there were some yummy dove chocolates. Seriously, dark chocolate is the BEST! Next I found this most gorgeous purse with some treasures inside it. Some gems and some princess brads, and a harry potter bookmark. The purse itself is amazing. I asked Jody how she did it and she said with chalk and craft inks and lots of embossing powder. It just shines. It is just so amazing. She put in so many brads and she said she even had to use a drill on it. Amazing! I avoid scary tools like drills wher...

HANNA PREVIEW: For the Soul

This set is totally cool! I have not seen anything like it! I think it is perfect for a sympathy card, a thinking of you, a little hand out at church, maybe even for cards at Easter (thinking ahead here) etc. It is so CUTE! Hanna looks so angelic and well, to be completely honest, reminds me of my little sister (not sure why). I used the sketch at Card Positioning Systems (#83) for the layout. I was going for a "touched by an angel" look on the main image (and I think I kind of created that.) I used vellum to overlay the image to give it that glossy fuzz (soft focus). Stamps : For the Soul (Hanna Stamps), "God Bless" sentiment by American Art Stamp Paper: Lily Kate - Basic Grey, Neenah Solar White, SU vellum card stock, SU Whisper White Ink : Onyx Black Versafine Accessories : Sheer 5/8th Inch organdy ribbon, Nestabilities (Circle and scalloped circle), sewing machine, white thread, circle of plastic canvas, copic markers, white brads, paper piercing ...
