What's For Dinner Wednesday - Salmon with Avocado and Mango Salsa

This recipe comes from a book called "Express Aisle Gourmet" by Bill Dertouzos. It looked really appetizing to me and has less than 12 ingredients which is just awesome. Plus, I love salmon! YUM! Let me know what you think.

Salmon with Avocado and Mango Salsa

Ingredients:

2 6oz salmon fillets
1 tbsp canola oil
1 cup of diced mango chunks (canned or fresh)
1/2 cup diced red onions
1 ripe avocado (diced)
2 tbsp balsamic vinegar
1/4 cup extra virgin olive oil
salt and pepper to taste

Directions:

Preheat oven to 300F. Season salmon with salt and pepper. Heat canola oil in an ovenproof skillet. Add salmon and cook on each side for 2 minutes. Place skillet in the oven and bake for 6-7 minutes. In a large bown, combine mangoes, onions, and avocado. Season to taste with salt and pepper. Drizzle with blasamic vinegar and olive oil, toss well. Divide salmon on two plates and place a scoop of salsa over the top. ENJOY!

that salsa sounds delish...i'll have to give it a try. try broiling or grilling your salmon for even more fresh flavor ;)

HANNA PREVIEW: For the Soul

This set is totally cool! I have not seen anything like it! I think it is perfect for a sympathy card, a thinking of you, a little hand out at church, maybe even for cards at Easter (thinking ahead here) etc. It is so CUTE! Hanna looks so angelic and well, to be completely honest, reminds me of my little sister (not sure why). I used the sketch at Card Positioning Systems (#83) for the layout. I was going for a "touched by an angel" look on the main image (and I think I kind of created that.) I used vellum to overlay the image to give it that glossy fuzz (soft focus).
