Whats For Dinner Wednesday - Sweet & Sour Meatballs in the Crockpot

This recipe comes from the book "101 More Things to Do With a Slow Cooker" by Stephanie Ashcraft and Janet Eyring. It is yummy and super simple. I made my own meatballs (rolled ground turkey into balls and boiled them) and it turned out YUMMY! We don't eat beef, so that is why the exchange.

Sweet & Sour Meatballs

2 pkg's (18 0z each) frozen cooked meatballs (we used homemade ground turkey rolled into balls and boiled
1 can (14 0z) crushed pineapple (with juice)
1 cup brown sugar
3 tbsp soy sauce
1 tbsp cornstarch
1 tbsp water

DIRECTIONS: Place frozen meatballs in a greased 3.5 to 4 quart slow cooker. In a saucepan, combine pineapple, brown sugar, and soy sauce. Bring mixture to boil stirring frequently. In a small bowl combine cornstarch and water together, then add to simmering sauce to thicken. Pour sauce over meatballs. Cover and cook on low heat, 3-4 hours. Makes 10-15 servings.

Meatballs can be served on a platter with toothpicks as appetizers, or over hot cooked white rice as a main dish.

This sounds yummy! I am going to have to try this! I have never heard of boiling the meatballs. They don't fall apart? Thanks for sharing! YUM! Lisa K

I used ground turkey and rolled it into balls myself. The trick is to have the water at boiling when you put the meatballs into it . . . then so far I have not had them fall apart. They are YUMMY!

This sounds so yummy! When you say greased crockpot...what are you using to grease it with? Sounds like a recipe that I'll definately try.

Now where is that crockpot of mine? lol

I just sprayed mine with Pam spray -- oh and I also use those crockpot liners . . . I got them at my grocery store for a couple dollars -- they make clean up a breeze.

(SSD014) - Ear Infections and Pneumonia

I apologize for my late posting today . . . the countdown to being 40 weeks preggo continues.  This week has been crazy out of control already, and it's only Tuesday!  YIKES!   Friday night Baby E was running a fever and really congested.  We gave him tylenol/motrin, but he would not take in fluids, and I was worried about him, so I slept on he floor beside his bed (stupid thing to do at 39 weeks pregnant).  Anyway, I cried a bit, and when I woke up in the morning, I had the most intense pain in my right ear ever!  Seriously OW!   Saturday, Mic took the baby to the pediatrician, where he was diagnosed with double ear infections, and pneumonia -- he had a breathing treatment there, and an antibiotic shot . . . and his lungs were sounding much more clear when he left.  Late Saturday night his fever broke, much to our relief.   Sunday was an okay day, mostly we just all rested -- an interesting thought occurred to me while I was on th...
