Gingerbread Cookies (from Wilton)

So I was surfing the internet today and I came across this recipe for gingerbread and it sounded yummy and E has been bugging me to bake gingerbread men with her, so this year for Christmas, we are going to do it, using this recipe. You should try it too and tell me how your cookies turn out.

Ingredients:

5-5-1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

2 teaspoons ginger

2 teaspoons cinnamon

1 teaspoon nutmeg

1 teaspoon cloves

1 cup shortening

1 cup sugar

1-1/4 cups unsulphured molasses

2 eggs, beaten

DIRECTIONS: Preheat oven to 375° F. Thoroughly mix flour, soda, salt and spices. Melt shortening in large saucepan. Cool slightly. Add sugar, molasses and eggs; mix well. Add four cups dry ingredients and mix well.

Turn mixture onto lightly floured surface. Knead in remaining dry ingredients by hand. Add a little more flour, if necessary, to make a firm dough. Roll out on a lightly floured surface to a 1/4" thickness for cut-out cookies.

If you're not going to use your gingerbread right away, wrap dough in plastic and refrigerate. Refrigerated dough will keep for one week, but be sure to remove it 3 hours prior to rolling so it softens and is workable.

Dip cutters in flour and cut. Remove excess dough. Make features with pastry tips and small cutters.

For ribbon tie, cut two holes with a drinking straw side by side at neck. Bake 6-10 minutes or until lightly browned. Re-pierce hole if needed. Let cool on sheet for 2-3 minutes. Remove carefully with large spatula. Cool on wire rack. When cool, thread ribbon through neck and tie. Gingerbread easily absorbs humidity; store in a cool dry place.

Makes approximately 40 cookies

HANNA PREVIEW: For the Soul

This set is totally cool! I have not seen anything like it! I think it is perfect for a sympathy card, a thinking of you, a little hand out at church, maybe even for cards at Easter (thinking ahead here) etc. It is so CUTE! Hanna looks so angelic and well, to be completely honest, reminds me of my little sister (not sure why). I used the sketch at Card Positioning Systems (#83) for the layout. I was going for a "touched by an angel" look on the main image (and I think I kind of created that.) I used vellum to overlay the image to give it that glossy fuzz (soft focus). Stamps : For the Soul (Hanna Stamps), "God Bless" sentiment by American Art Stamp Paper: Lily Kate - Basic Grey, Neenah Solar White, SU vellum card stock, SU Whisper White Ink : Onyx Black Versafine Accessories : Sheer 5/8th Inch organdy ribbon, Nestabilities (Circle and scalloped circle), sewing machine, white thread, circle of plastic canvas, copic markers, white brads, paper piercing ...

My Decade Later Comeback and Playing Catch Up

Hello friends, It's been awhile and I kind of dropped off the face of the planet since moving to Oregon. I got busy with growing four babies into teens, and attempting to hold together a marriage with a partner who was working out of town for the most part. It was a lot! Truth be told, I have been spending most of my time over on Instagram which allows for more quick picture and caption posts (@the.amanda.sewell), but I really, genuinely miss having a journal of our adventures, so I'm back.  Some changes, my ex-partner moved out in October of 2023 (after 23 years of marriage, who would have thought?) and I am on a new, single mom adventure with the fabulous four. Luckily, they are adjusting to the changes well as we navigate this challenging time as a family team. Things are still in flux and hopefully at the end of all of this, the dust will settle and we will end up landing on our feet. Because of this change, I needed to go back to work and after not working for the past lo...
