Weezer Cruise - Day 3 - Cozumel

So first, here is a picture of me taken the morning following the concert with the awesome drumstick mentioned in the previous post.  YAY!  Such a good memory, and keepsake.


We arrived in the morning in Cozumel, but since we knew our excursion wasn't until noon, we took a slow morning getting ready and having breakfast.  It was really nice.  Then we finally wandered off the ship to the island and did a little exploring in the little touristy shops.

I'm such a mean wife, I always make Mic pose in these random funny things . . . this trip was no exception.  I think these turned out awesome though . . .

Our excursion was called "Salsa and Salsa."  It took us forever to decide upon what to do in Mexico, but I am glad we did this one.  I chose it because I thought it would be fun to learn how to make some salsas, and also perfect because Michael is ALWAYS wanting me to go dancing, learn dancing with him, and this class had a short salsa dance lesson as well.  If you drink (we don't) - it also had bottomless margaritas and we learned how to make some margaritas as well.  We all got to wear these super dorky chef hats too, which was totally fun!

Fiery Red Salsa 
1-3 cloves roasted garlic 
1/4 white onion roasted and chopped 
½-2 roasted jalapeño or serrano chiles (remove seeds for milder salsa) 
2 roasted roma tomatoes
Pinch of cilantro, lime juice, salt to taste

Grind the garlic in the molcajete, add chile, onions, tomatoes, a pinch of cilantro, salt and a few drops of lime juice.  Continue mashing until well blended.



Tangy Salsa Verde (my fave one)
1-3 cloves roasted garlic

4 roasted tomatillos
Pinch of cilantro, lime juice, salt to taste

Grind the garlic in the molcajete, add chile, onions, tomatillos, a pinch of cilantro, salt and a few drops of lime juice.  Continue mashing until well blended.


Oaxacan Guacamole
¼ cup of green salsa verde
Juice from ½ -1lime
1 ripe avocado
Salt to taste

Use your molcajete to blend all the ingredients until smooth

Fresh Pico de Gallo
 2 roma tomatoes
½ white onion, diced
½ jalapeño de-seeded and diced
Pinch of cilantro, lime juice and salt to taste

Mix all ingredients together then separate into 2 bowls.  To one of the bowls, add a few drops of lime, pinch of cilantro, salt to taste.  In the other bowl: Tropical Salsa - Add 1 tbls chopped pineapple, or your favorite  tropical fruit.  Mix well and serve.

Mango/Melon Mix Salsa
½ red pepper, diced
½ jalapeño de-seeded and diced
1 tbls of mango or melon (you can also use honey dew, papaya)

Pinch of cilantro and 4 drops of lime juice.  Mix all ingredients together. Best served with Chicken or Fish

Rompope Dessert Salsa  (so amazingly YUMMY)
½ mango,melon, or pineapple chopped
1 tbls chopped apples
1-2 tbls Rompope (Vanilla liqueur) - (or if you do not drink, orange juice can sub here)
1 tbls coconut
    Mix and chill.  Serve over ice-cream of your choice.


This is the dessert salsa over the most amazing creamy Mexican ice cream!  Delish!

So when we got back, we did a little more shopping at some of the little shops and then headed back aboard the cruise ship, we didn't want to be late and we ate and then totally crashed.  I wanted to do 80's prom that night but we were both so pooped out from the day, we just slept through it.

HANNA PREVIEW: For the Soul

This set is totally cool! I have not seen anything like it! I think it is perfect for a sympathy card, a thinking of you, a little hand out at church, maybe even for cards at Easter (thinking ahead here) etc. It is so CUTE! Hanna looks so angelic and well, to be completely honest, reminds me of my little sister (not sure why). I used the sketch at Card Positioning Systems (#83) for the layout. I was going for a "touched by an angel" look on the main image (and I think I kind of created that.) I used vellum to overlay the image to give it that glossy fuzz (soft focus).
